I had big plans for this week’s power food – the tomato. After all it is my favorite
vegetable fruit. If nothing else, I simply use them in a salad. So I was kind of making plans to be flamboyant about the whole tomato thing.
And then the day arrived when I had to cook, shoot and write the post for this week’s Power food blog group. It was raining. Soft droplets of rain falling ever so softly and making the beautiful Rocky Mountains look even more beautiful.
The scorched earth soaked it all up and the greens looked more lush. It was a perfect evening for a good book and some soup. With a few whole wheat home made bread croûtons, It was blissful and blissfully comforting. I think I might have just given the welcome sign to Fall with two soups in a row. Oh well!
Why are tomatoes a power food ?
“Intake of tomatoes has long been linked to heart health. Fresh tomatoes and tomato extracts have been shown to help lower total cholesterol, LDL cholesterol, and triglycerides. In addition, tomato extracts have been shown to help prevent unwanted clumping together (aggregation) of platelet cells in the blood – a factor that is especially important in lowering risk of heart problems like atherosclerosis. (In a recent South American study of 26 vegetables, tomatoes and green beans came out best in their anti-aggregation properties.” Source WHF
And they are a great source of vitamin C and beta-carotene; mineral manganese; Vitamin E. Yes these tiny little things are a nutrient jackpot. And if you have some green ones, that may not tipe on the vine, here is how to enjoy them too apart from making fried green tomatoes or letting them ripen on their own.

This was the soup I made and enjoyed! Healthy, nutritious and just very homely tomato soup
Tomato Soup – Nourishing comfort
- 5 cups chopped tomatoes
- 5 cups water
- 1 medium potato peeled and cubed
- 2 cloves of garlic
- salt and black pepper to taste
- A few sprigs of cilantro chopped fine
- 1 tsp oil
- croutons optional
- Heat the oil and add the garlic. Stir to cook until fragrant.
- Add the potatoes and let it cook for a minute or so.
- Add salt and the tomatoes and water and cover and cook until the potatoes are tender and completely cooked.
- Blend with a hand blender and strain through a sieve.
- Return to the pot and allow it to come to a boil, add in the pepper and cilantro
- serve hot, topped with some croutons.
