Heat the oil and add the garlic. Stir to cook until fragrant.

Add the potatoes and let it cook for a minute or so.

Add salt and the tomatoes and water and cover and cook until the potatoes are tender and completely cooked.

Blend with a hand blender and strain through a sieve.

Return to the pot and allow it to come to a boil, add in the pepper and cilantro

serve hot, topped with some croutons.
