Tomato Soup – Nourishing comfort

Servings 4 cups (approx)

Ingredients

  • 5 cups chopped tomatoes
  • 5 cups water
  • 1 medium potato peeled and cubed
  • 2 cloves of garlic
  • salt and black pepper to taste
  • A few sprigs of cilantro chopped fine
  • 1 tsp oil
  • croutons optional

Instructions

  1. Heat the oil and add the garlic. Stir to cook until fragrant.
  2. Add the potatoes and let it cook for a minute or so.
  3. Add salt and the tomatoes and water and cover and cook until the potatoes are tender and completely cooked.
  4. Blend with a hand blender and strain through a sieve.
  5. Return to the pot and allow it to come to a boil, add in the pepper and cilantro
  6. serve hot, topped with some croutons.
