Tiger Nuts and Fig Smoothie

Healthy food!  What does it mean to you ? For me it is “food closest to it’s natural form”, without much processing. I am always on the lookout for products that are minimally processed and easily available to supplement my snack box or a quick breakfast. Thankfully, Colorado has a lot to offer in terms of  local companies who have  the same healthy values as I do.  I was really thrilled when I was invited by Sprouts to tour Made in Nature and get a chance to make figgy pops with the team as I had already  raved about their dried mango slices. When I first tried them, I had to make doubly sure that I was reading the ingredient list right; Ingredients: ORGANIC DRIED MANGO SLICES.  There was no sugar added, nothing else. Just mangoes and a little of pure genius drying of a pulpy fruit. And when I had my first taste of the Goldenberries! I was in heaven. They are not for everyone, but if you are into tart berries, these will please you. Adding them to smoothies or salads is what I usually do with them.

The things that stand out about Made in Nature immediately are that the products are 1) Organic and Non Gmo and 2) they are allergen and vegan friendly. The figgy pops have gluten free oats as one the ingredients making them ‘gluten free friendly’ snacks that pack a delicious punch in a couple of bites.

As part of the experience, Made in Nature offered us some of their products to try and I was particularly delighted by their Mission figs. Dried just right, with a great flavor profile. In addition to being a natural source of sweetness, figs are highly nutritious. They are a great source of potassium and fibre and are high in antioxidants. I try to get in a good amount of figs into my diet for these properties. It is a bonus that it eliminates the need to add any other kind of sweetener for my dish. This particularly delicious Tiger Nuts and Fig Smoothie with chia seeds is my favorite off late. I will talk more about tiger nuts in a different post because today is all about these beautiful figs.

You may ask, why dried figs? One main reason is that when dried,  the nutrient value of the figs increases. The other is that it increases the shelf life. And the flavor  of these dried Mission figs in the Tiger Nuts and Fig Smoothie is sweet and nutty .

Tiger Nuts and Fig Smoothie

A creamy delicious combination of tiger nuts, figs and almond milk

Ingredients

  • 4 tbsp tiger nuts
  • 4 mission figs
  • 2 cups almond milk
  • 1/4 tsp vanilla extract
  • 6 halves of pecans
  • 2 tbsp chia seeds soaked in water for a few minutes

Instructions

  1. Blend the tiger nuts, mission figs, almond milk, vanilla extract and pecans together until smooth and creamy. Pour into a serving glass and top with chia seeds

Recipe Notes

This recipe assumes the use of a powerful blender. Soaking the tiger nuts in water, in the fridge overnight will achieve the same results with any blender.
