Spiced Pumpkin Butter Granola

A few weeks ago, Sprouts Farmers Market coordinated a trip for a few Colorado Bloggers to visit Bobo’s.  My Colorado blogging friend Karissa recently posted about the entire tour and you can read all about it on her blog here.  To say that the tour was inspiring would be an understatement.  Touring Bobo’s also included a hands on “playtime” to create our own Bobo bars and I must say it was a real treat. Not only did the team at Bobo’s bake our individual bars for us, they even shipped them to us. If I may say so myself, I was happy with how my almond butter bar with nuts and raisins turned out.

A tour of Bobo’s production kitchen touched upon the many facts about the bars. All the bars are made from quality ingredients, mixed in small batches as per the flavor of the day. All bars are measured out with a machine to reduce human error, but after measuring out they are pressed down by hand in their individual baking compartment and baked. It is a great combination of handmade with love and use of machines to make producing large quantities possible. The most striking thing about Bobo’s bars is that they are fresh. Freshly made and quickly shipped. We got to try most of their flavors as the team at Bobo’s gave us all goodie bags. It was hard deciding on a single favorite flavor combo. But if I go by what I reached out for most of the time, I will have to go with the original. You can buy Bobo’s online or in a store near you.

Sprouts also provided us with a goodie bag of delicious fall inspired spices and ingredients. So I made use of my new found inspiration and the goodie bag ingredients and tweaked my all time favorite granola recipe to make this delicious fall inspired spiced pumpkin butter granola.

Spiced Pumpkin Butter Granola

This spiced pumpkin butter granola, you guys! I am not even a pumpkin fan. Or even a pumpkin spice fan. But I do have people in my life who love everything pumpkin. So I had made the recipe keeping them in mind. However, I would be lying if I didn’t acknowledge that even I was addicted.

Spiced Pumpkin Butter Granola

The flavor of the pumpkin shines through, the subtle of the spices like cloves, nutmeg and cinnamon in the pumpkin spice mix adds that unique warmth. All in all a really nice fall themed granola for even the non pumpkin lovers in life.

You can make this Spiced Pumpkin Butter Granola with gluten free oats. And, as usual the mix ins are all up to you.

Spiced Pumpkin Butter Granola

Spice up your mornings with hints of pumpkin flavor and a warming heat from the pumpkin spice

Course Breakfast, Snack

Ingredients

  • 4 cups rolled oats
  • 1/3 cup maple pumpkin butter
  • 1/3 cup coconut oil melted
  • 1/3 cup brown sugar
  • 1 tsp salt
  • 1/4 tsp pumpkin spice
  • 1/2 cup mix ins - I used almonds and raisins

Instructions

  1. Preheat oven to 325 *F

  2. Heat brown sugar, pumpkin butter, salt and coconut oil until the sugar dissolves.

    Stir into oats, add the pumpkin spice and put into a stand mixer with a paddle attachment.


  3. Mix the oats for about 5 minutes. This helps oats break down a little making for better clumps.

    Add in the mix ins and stir 

  4. Place in a half sheet pan/ jelly roll pan lined with parchment and spread it out in an even layer. Keep the layer about 1/2 inch thick to get bigger clumps of granola


  5. Bake for 25 minutes, then turn the pan around and cook for another 10 minutes until golden brown and toasted.

    Remove from oven and let it cool for about 30 minutes before breaking it down into clumps.
