Paleo Bacon Kale and Egg Waffle Sandwich

I have been very fortunate to have a blogging partnership with Sprouts Farmers Market because through this partnership I have met a lot of companies that are local and healthy eating friendly.  One such company we got to tour recently was Birch Benders . The latest product from Birch Benders – Toaster Waffles is my absolute favorite to make a quick breakfast with. I especially love the Paleo Toaster waffles because that’s the one I can eat. 2 to 3 minutes in the toaster oven, a drizzle of maple syrup, an egg on the side and breakfast is done.

Our family favorite pancake mix right now is the Birch benders Paleo Banana. My daughter has taken a particular liking to it because it is easy to mix and cook, the sugars from the banana caramelize nicely , lending a note of butterscotch. Teen Approved. The pancake mixes can be made into pancakes or waffles. And the toaster waffles do not have to be used as just waffles. I sometimes use them as a replacement for bread in sandwiches. They work rather perfectly.

Paleo Bacon Kale and Egg Waffle Sandwich

This Paleo Bacon Kale and Egg Waffle Sandwich came together in less than 10 minutes for 2 servings. While you cook the eggs and bacon, the toaster oven heats up the waffles. Then you assemble and eat. I use kale in this sandwich, but you may use tomatoes and lettuce and make a yummy BLT.

Ingredients

  • 4 Birch Benders Paleo Toaster Waffles
  • 4 slices bacon ( Paleo bacon)
  • 1 leaf kale, torn into two pcs
  • 1/2 tsp oil
  • 1 pinch of salt
  • Pepper to taste ( optional)

Instructions

  1. Cook bacon as per your liking. We like it a bit crisp.

  2. Heat a non stick pan and add the oil to coat the bottom of the pan.  Fry the eggs on medium heat until cooked to your desired doneness. Ours are easy plus. Add the salt and pepper. Remove from pan.

  3. Once the eggs are done, saute the kale in the same pan for a brief moment, until it turns a dark green.  Remove from heat

  4. Toast the waffles and assemble the sandwiches. Waffle > Kale > Bacon > waffle > egg . OR whichever way you want to . There are no rules.
