Our star ingredient this week is the “kale”. This healthy ingredient provides more nutrition for a very little calorie value. With Kale being in the news and one of the most talked about/ written about ingredient for its health benefits, I am going to just post a recipe. I know that you know all about kale.
Kale Salad with Yogurt and Mustard
- 1 C chopped Kale
- 1 C Greek yogurt
- 1/4 tsp ground mustard
- 1/2 tsp hopped Thai green chili
- salt if needed
- Blanch the kale and chop fine
- Whisk the yogurt, add the chili and mustard
- Add in the kale and mix it all together.
- I don't add the salt, but you may if you want to.
- Eat it as a side or serve as a dip.
