Our star ingredient this week is the “kale”.  This healthy ingredient provides more nutrition for a very little calorie value. With Kale being in the news and one of the most talked about/ written about ingredient for its health benefits, I am going to just post a recipe. I know that you know all about kale.

Kale Salad with Yogurt and Mustard

Ingredients

  • 1 C chopped Kale
  • 1 C Greek yogurt
  • 1/4 tsp ground mustard
  • 1/2 tsp hopped Thai green chili
  • salt if needed

Instructions

  1. Blanch the kale and chop fine
  2. Whisk the yogurt, add the chili and mustard
  3. Add in the kale and mix it all together.
  4. I don't add the salt, but you may if you want to.
  5. Eat it as a side or serve as a dip.
