Heat up a flat griddle and spray some oil on it

Sprinkle salt and pepper on the fish and tap with your fingers.

Place the fish fillets skin side down and cook until the skin crisps up

Carefully turn the fillet to cook on the other side.

While the fish is cooking, heat up a medium size pan.

Add butter/oil and cook the garlic. Now add the orange juice and let it simmer until it reduces in volume. About 3 minutes

Add the honey and the rosemary.

When the fish is cooked, place in a plate and drizzle the sauce over the top

For this dish I cooked the zucchinis on the same griddle as the fish with just a touch of salt and a spray of oil.
