Almond Linzer Cookies #CreativeCookieExchange


  • 3/4 cup butter softened
  • 1/2 c sugar
  • 1 egg
  • 2 C all purpose flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 3/4 Cup almond flour
  • pinch of salt

For filling

  • Jam of your choice.


  1. Preheat the oven to 350*F
  2. Cream the butter and sugar together in a stand mixer with the paddle attachment.
  3. Add the egg and mix in well, scraping the bowl a couple of times. Add vanilla extract. Mix.
  4. Combine all dry ingredients and stir to mix well.
  5. Add to the butter mixture and mix until a crumbly dough forms.
  6. On a well floured surface, pat the dough together and roll out to 1/4th of an inch thickness.
  7. Cut the cookies with your favorite linzer cookie cutters. If you don't have the linzer cookie cutters, Using a 3 inch cookie cutter (any shape) cut out the cookies. Place the cookies about 1 inch apart on parchment lined baking sheet. Use a smaller cookie cutter to cut out the centers of half of the cookies on the baking sheet. Reroll any scraps and cut out the remaining cookies.
  8. Bake for 10 to 12 minutes until crisp and golden brown.
  9. Allow to cool. Spread a thin layer of jam on the bottom surface of the full cookie Place the cut-out cookie on top and gently sandwich them together.
