Orange and Poppy Seed Quick Bread and a CookBook Swap

Ingredients

Batter

  • 3 eggs
  • 3 cups all purpose flour
  • 2 1/2 cups sugar
  • 1 1/2 cups milk
  • 1 cup butter
  • 1 1/2 tbs poppy seeds
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 1 1/2 tsp almond extract
  • 1 1/2 tsp vanilla extract
  • 2 tbs orange zest

Glaze

  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 3/4 cup sugar
  • 1/4 cup orange juice

Instructions

For the bread

  1. Preheat oven to 350 degrees.
  2. Beat the butter well and mix in the sugar.
  3. Add in the eggs, mix then add the milk and both extracts.
  4. Sift the flour, baking powder, salt and poppy seeds.
  5. Add the dry ingredients to the egg mixture and mix well.
  6. Add in the orange zest.
  7. Pour the batter into 2 greased and floured loaf pans.
  8. Bake for 40 to 50 minutes or until a tester inserted in the center comes out clean.

For the glaze

  1. Prepare glaze by mixing all ingredients in a small sauce.
  2. Heat until they are blended. Do not boil.
  3. Spread the glaze on the baked bread while still hot, then cool in pans on a rack.
  4. Remove from pans when nearly cool.
