Watermelon Mojito – Ina Garten Friday

Ingredients

  • 20 large fresh mint leaves
  • 3 to 4 thick slices fresh watermelon
  • 12 ounces light rum
  • 1/2 cup simple syrup
  • 6 tablespoons lime juice
  • Sprigs of mint for serving
  • Long slices of Cucumber for serving

Simple Syrup

  • 1 cup sugar
  • 1 Cup water
  • Combine and gently simmer until sugar dissolves.

Instructions

  1. Muddle the mint.
  2. Remove and discard the rind and seeds of the watermelon.
  3. Put the watermelon into a food processor fitted with the steel blade and puree.
  4. Put the mashed mint into a large pitcher with 2 cups of pureed watermelon, the rum, simple syrup, and lime juice and stir to combine. Pour the mixture into a pitcher for serving.
  5. When ready to serve pour the mojito mixture into the glasses on ice, and garnish with sprigs of fresh mint and slices of cucumber. Serve chilled.
