There are possibly a billion recipes on the internet for  Pan Seared Salmon and Asparagus. After all, salmon is best served pan seared and asparagus is the obvious choice of side. So you may wonder what is special about this recipe that I chose to share it on my blog. Well, first off – the sauce. Mojo verde.  Lush green, smooth, garlicky with a shimmer of olive oil. It reminds of Indian cilantro chutney. Second off, it is a meal you can put together in less than 20 minutes including the clean up. And it looks and sounds so fancy that you could make it a valentines day dinner. Afterall, this dish is full of aphrodisiac foods bound to add heat to your love life!

And finally, you don’t really need a recipe for the Pan Seared Salmon and Asparagus with Mojo Verde. It really is as simple as gathering a few ingredients from the fridge and getting to work. Delicious yet simple. After all, valentines day food is supposed to be all about flavor and less about the work put into it. You could also make the sauce in advance and then just make the dish before dinner.

Tips for cooking fish :-

    1. Pat the fish dry with a kitchen towel. This ensures you get a crisp skin. If there is any moisture on the fish, instead of a sear the fish will steam.
    2. Make sure your pan is hot before adding the oil. Then put the oil in, add in the fish skin side down. Allow to cook undisturbed until it forms a nice crust underneath.
    3. Don’t overcook.

Pan Seared Salmon and Asparagus with Mojo Verde

Ingredients

Mojo Verde Sauce

  • 1 bunch cilantro
  • 1/2 bunch parseley
  • 2 cloves garlic
  • 2 thai green chilies
  • 1/2 tsp cumin
  • 1/4 c olive oil
  • 2 tbs lemon juice
  • 1 tsp salt ( or to taste)

Salmon and Asparagus

  • 10 stalks trimmed asparagus
  • 2 4- 6 oz fillets salmon
  • 1 tbsp coconut oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chilli flakes
  • salt to taste

Instructions

Mojo verde sauce

  1. Remove the stems from the cilantro and parsley and put in a belnder


  2. Add the  garlic, chillies, salt and cumin and blend for a few seconds

  3. Slowly drizzle in the olive oil. You don't want to make it too smooth. 

  4. Finish with the lemon juice. Adjust seasonings. 

Asparagus

  1. Boil a pot of water and add a pinch of salt in it

  2. Drop the asparagus in the boiling water and cook until done. The asparagus will be dark green and just a bit soft. 

  3. Remove from hot water and dunk the asparagus in cold water to stop cooking

  4. Remove from cold water and let it dry on a clean kitchen towel

Salmon

  1. Rub the salmon with onion powder, garlic powder and the salt. heat a pan on high heat and add the oil. 

  2. carefully lower the salmon into the pan , skin side down and allow to cook for about 2-3 minutes on high - until the skin crisps up and the salmon is almost cooked.

  3. Flip over to the other side and finish cooking

  4. once the fish is cooked , sprinkle with the chilli flakes and remove on to a wire mesh to finish resting.

  5. Meanwhile, in the same pan add the asparagus and toss to heat it through. 

  6. Serve the asparagus with the fish and the sauce.
