Four Ingredient Healthy Cookies

 

Anyone who knows me, knows that I am not a gym rat. It’s not that I am lazy. I am on the move all day, every day. My job requires me to stand non stop for 8 + hours. You can’t cook or teach while sitting, can you?  Don’t get me wrong. I do love to workout, but it has to be on my terms. When I want it and Where I want it. I don’t usually like going for a group workout. I find the process intimidating.

I mean seriously, I can barely drag myself to the gym at 7 in the morning, with barely brushed teeth and a bottle of water. And there are people coming out of the training room with sweat that could sink a ship and a  glow on the face as if they were freshly in love or something.  I watch all this with eyes I can barely keep open and spot the trainer and try not to make eye contact. And while I am busy trying to hide myself somehow, a stream of folks arrive to join the session. Fit forms, great abs, make up on. They even have time to put mascara and eye liners on!! And as if that was not enough, I am almost always last in any kind of running activities they make me do. Well duh! I am barely awake! Remember?

So, I still do go for group fitness workouts, but mostly I have learned that  good health is achieved 80% in the kitchen and 20% with the workouts. I do these workouts once a while to get a change in rhythm. I love my walks by myself and somedays I try to get in a jog. But food is where my focus is. Wholesome food. With little treats thrown in every now and then, but mostly wholesome, cooked from scratch, without added chemicals and preservatives. Just like this Four Ingredient Healthy Cookies recipe.

Most people make a New Year Resolution to join a gym, workout, eat better . I always make one to stay away from one in January. I invite you to stick with your resolution of eating healthier, wholesome foods. And so, I have joined my #creativecookieexchange blogger friends to bring you some healthy cookies to enjoy this month. The Four Ingredient Healthy Cookies recipe just uses four ingredients. While one can argue that it doesn’t look too fancy, I say give it a try. The taste and texture may surprise you.

Four Ingredient Healthy Cookies

Course Dessert
Servings 10 cookies

Ingredients

  • 1 cup rolled oats
  • 1.5 medium ripe bananas, preferably frozen
  • 1/8 tsp cinnamon
  • 2 tbsp raisins

Instructions

  1. Preheat oven to 350*F 

    Quickly process the rolled oats in a food processor to get a coarse powder and put in a mixing bowl. Add cinnamon and the raisins. 

  2. Mash the bananas into the oat mixture.

  3. When completely mashed in, spoon a tablespoon at a time onto a parchment lined cookie sheet. This will make around 10 - 12 cookies.

  4. Bake for 15 to 18 minutes until crisp on the edges. Cool and enjoy as a snack or for breakfast.
