The monthly “Inspiring Thursday” post is a bit overdue this month. But before you judge me, I have a great reason for not posting it on Thursday. The reason is that this month’s Inspiring Thursday features Barb of the Creative-Culinary fame, and it’s posted today because it is Barb’s Birthday!

 In everyone’s life, at some time, our inner fire goes out. It is then burst into flame by an encounter with another human being. We should all be thankful for those people who rekindle the inner spirit. ~Albert Schweitzer.

I really am thankful for Barb, for her friendship and for the inspiration she is. When I first met Barb, it was at our local Blogger’s brunch and we were also celebrating her Birthday. Yes, it was a year ago. She was recovering from her leg injury so she walked in with a walking stick and sat near me. We got talking and she left me mesmerized with her courage, her zeal for life and passion for all things food.  The way she dealt with the recovery, her overall fiercely independent and courageous outlook to life left me in awe.

That blogger meeting was my first ever interaction with the great set of bloggers we have here in Denver. It was Barb’s idea to start the group and get all the local bloggers to know each other and interact. Yet another reason to be thankful for. Her idea of getting us all together resulted in beautiful friendships with people who understand me and whom I understand.

Conversations with Barb always make me think differently about everything. She has a way of making me get another perspective. And for that I am forever thankful.  I had decided to bake a cake for her today and post it as her “Birthday present”.  But then it would be over soon and she wouldn’t get to taste it. So instead the cake will be baked on the weekend, when I will be meeting her and our other friends. For today, I have the Flirty Daiquiri that I made just coz she showed me how to mix drinks!  Now that’s one reason why my husband is thankful that I have friends like Barb who teach me to get out of my comfort zone and just be!

Flirty Daiquiri

Ingredients

  • 2 oz Premium Vodka
  • 2 oz Blue Curaco
  • 1 oz White Rum
  • 2 oz Simple Syrup more or less based on how sweet sour you like
  • 1 oz Lemon Juice more or less based on how sweet sour you like
  • 2 cups Ice
  • 4 oz Sprite or other soda

Instructions

  1. Mix it up
  2. Strain and Serve
  3. Feel the bliss
