This is adapted from Tarla Dalal’s “complete Gujarati cook book” -

Try it out for your self.

Methi Muthia

Ingredient
1 bunch fenugreek leaves (methi), finely chopped
1/2 cup whole wheat flour
1/2 cup gram flour
1 teaspoon green ginger-chilli paste
1 teaspoon sugar
juice of 1 lime
1/2 teaspoon garam masala
1/2 teaspoon turmeric powder
a pinch of baking soda
3 tablespoons oil
salt to taste

Proceed :

1) Take a bowl and Put the chopped methi leaves in it and add 1 teaspoon of salt and mix well.

2. Allow to stand for 5 to 7 minutes and squeeze out all the liquid from the methi leaves.

3. Add the remaining ingredients and mix well. Knead it to a soft dough ball.
4. Make small cylindrical shaped muthias and keep them on a plate.

Now you may either deep fry them in oil, like I did or cook them using steam or cook them in the curry of your choice.

For this recipe, I deep fried them.
